We recently crafted a small batch of whole-leaf, hand-rolled orthodox tea from a very old Assam tea bush known as *Bethjaan* with our STG partner at Golaghat district of Assam. The leaves of this cultivar are exceptionally large and have an impressive theaflavin and thearubigin profile. They were hand-rolled and fired using wood, following a very organic manufacturing process. The resulting liquor is excellent, featuring a pronounced umami note, briskness, and a hint of jaggery-like sweetness at the finish. This batch is quite rare and resembles teas from wild-grown tea trees.
