The olive trees that once stood proudly surrounding the ancient city of Messene now drip their liquid gold into every bottle of LIÒRIZA.


LIORIZA – STAVROPOULOS ESTATE L.P. has been specializing in the production of Kalamata Extra Virgin Olive Oil and Kalamata olives since 1968, but our roots run even deeper, with our olive cultivation tracing back to 1876 under the stewardship of our great-grandfather, Dimitrios Stavropoulos. 


Carrying centuries of tradition in our name, LIÒRIZA is the effort of three generations to create the most authentic and pure extra virgin olive oil from our land. Grown in the peaceful village of Aristodimeio, near Ancient Messene in Southern Greece, our olives benefit from the neighboring herbs and aromatic plants that lend their delicate touch to the olive oil. On the slopes of Mount Ithome, just 20 km from the Ionian Sea, these olive trees thrive in their natural environment, nurtured by the wild herbs and rocky terrain that define our land. 

 

Our name 'LIÒRIZA', meaning 'olive tree root' in the oldest local dialect, is a word our grandfathers used since the end of the 19th century—a reminder of the deep connection they had with the earth and the wisdom they passed down to us. 


Leading innovation with heritage in hand, our olive oil is cold extracted from Koroneiki variety olives, renowned for their vibrant green hue, fruity aroma, and perfectly balanced bitterness and spice. Each bottle is a testament to our commitment to traditional and sustainable farming methods, free from fertilizers and chemical sprays, respecting the natural environment and the animals that share our land. Cold extraction on the same day as harvesting ensures a beautifully balanced extra virgin olive oil, rich in antioxidants, healthy monounsaturated fats, and essential vitamins.

Every step in the bottling and packaging process, takes place in privately owned premises and fully complies with the strict standards set out in Food Safety Management System ELOT EN ISO 22000:2018, based on the procedures of the TÜV HELLAS (TÜVNORD) SA. Certification Body. All storage tanks have been fitted with a permanent nitrogen supply system, while the ambient temperature is kept constant at 18-19 degrees Celsius, using air conditioners and external thermal insulation.
